catering practical

Hello Everyone. It’s me again. Ok, in my last post, I mentioned I was a hit and miss cook. Well, that has never discouraged me from continuously trying. I have always been a fan of preparing (note i didn’t say trying or tasting) new dishes. My wonderful hubby calls me Catering Practical after a character in a popular Nigerian show “Fuji House of Commotion”. He also acts as my guinea……tester and always gives me “honest” feedbacks. Over the past weeks, i have tried devilled eggs(too salty) and Sri Lanka cutlets (too oily). However, there is one meal that I had a home run with. This happens to be my own recipe, so for lack of a proper name, we will call it PPS-potato and plantain stir fry. Horrid name…….. I know. I want the readers to come up with a name for the dish. Please classy and expensive sounding names only. Nothing like ratatouille.
One medium size potato
Two plantains
Carrots, cabbage
Onions, red bell pepper, green pepper and orange pepper(optional)
Lettuce, spinach (ugu would do nicely);
Boil the potato and plantain with salt to taste. Allow it to cool down, then chop into fine pieces. Chop all the other ingredients too. It would look like this.

Then you add oil to a flat wide pan. In case you want it healthy, you can use olive oil. In case you don’t care, you can use whatever oil you have. Add the onions and all the ingredients excluding the potato, plantain and cucumber. Constantly stir to avoid it sticking to the pan. Add your potato and plantain and keep stirring. You can add maggi at this point, crayfish or more grinded pepper………whatever floats your boat. Constantly taste the spinach or ugu to make sure it is tasty. ( Did you know that the botanical name for Ugu is Telfairia occidentalis…………amazing right? The power of Google. Of course my favorite scientific name is that of the shark, but that’s a discourse for another day). Please do NOT add salt. It doesn’t need it. You could either use cucumber or egg dressing or anything you like. I usually use either of the two and viola! PPS is ready


Looks Yummy right. Tastes so too. And it’s quite healthy to boot. Make it anyway you like. There is no hard and fast rule to the meal. What am I doing?

I have always believed that to own a blog, you have to be super cool and super interesting. How else would anyone give a crap about what you have to write. I have always viewed myself as a pretty average lawyer/masters holder/ housewife.(note the subtle way of tooting my own horn) My idea of a super power is eating whatever I like and still having an hour-glass figure.(Not that I have one now, I am as chubby as they come). I constantly obssess about my weight and my butt or lack thereof. My interests range from WWE to hindi movies, greek methodology (that’s where the nickname Hera emanates from), PS and PC games, exercises, fitness and I am yet to meet a wedding site that I didn’t like. Yeah, I am also a hit and miss cook, so I am what you could call “an aspiring chef”. Huge fan of google and . If you are a fan of comedy and sarcasm, that’s the site to visit.
So what am I doing? Why am I starting a blog? Last I checked, I didn’t get super cool over night neither did I suddenly become a riveting personality. However, i do know I have some writing skills …..or so I am told. I do have a lot of things going on in my chubby head. I leave you all to form your opinions about my writing skills as long as its positive opinions. If you share any of my above interests, you would find this blog quite interesting…….i hope.
